As some of you will know, I have an allotment and at this time of year, it is my pride and joy. It keeps us in beautiful peas, spinach and salads and much more all summer. But while I love the courgettes, in a year like this with plenty of rain, there are more that I can possibly use. Someone asked me if I wanted some this week and I think I wailed!
But one of the best recipes to use up courgettes is to put them in a cake. it’s a bit like carrot cake – you can’t really taste the courgettes, but it adds moistness and beautiful little green flecks to the cake.
There is also this wonderful shortbread recipe using lemon balm from the garden.
