I suddenly panicked last night that there wasn’t going to be enough food for Christmas. This is, of course, ridiculous. There is enough in the house to feed a small army, and the shops are only shut for a day!
But anyway, decided that a last minute Christmas Cake would stave off any potential hunger amongst the family and started looking for the recipe that I last made more than 2 years ago. It was an Italian Christmas cake, might have been close to Panforte, but it had chocolate chips in it, I do remember. A friend made it for me a few years ago and it was delicious, so she shared the recipe with me. Trouble is, both of us had the recipe written on little scraps of paper and neither of us can find them now!
So I decided to devise my own. I knew that if you boil the fruit a little, it goes a long way towards making the texture more like a mature cake. I had also bought some dark Celia gluten free lager in my Ocado shop, so that was perfect. It’s a traditional type of fruit cake, with very little flour, and an added packet of dark chocolate chips.
