So getting into the festive spirit with mulled wine and Christmas songs I mixed together my first batch of gluten free and dairy free mince pies and then had to wait impatiently whilst they baked in the oven! Using the shortcrust pastry recipe that I learnt on the Gluten free baking and living course I made really tasty, crispy pastry in record time. I filled the pastry cases to the brim with Morrisons mincemeat, I prefer simple traditional flavours but they also had some boozy alternatives. Finally I topped them with a little pastry star.
As soon as I bit into one straight out of the oven I knew I had to share the recipe with you all. Rich and fruity with a lovely crispy pastry casing and not a soggy bottom in sight.
The pastry recipe from Gluten free baking and living is so easy to recreate at home and I probably wouldn’t have had the courage to try if I hadn’t been on their Introduction to Gluten Free Baking course.
