I’ve started working on the recipes for the next issue of Gluten Free Baking and Living magazine which is due out Spring 2016. It will feature Classics of European Bakery, and lots of fantastic articles on and around being gluten free.
So I have been researching (and tasting) lovely cakes, breads and pastries from all over Europe and making gluten free versions of them.
I thought I’d share one of the recipes in a video on YouTube. It’s a gluten free version of the classic Tarta de Santiago (St James tart) which originates from Galicia in the Middle Ages at the time of pilgrimages. It is stencilled with the cross of St James. It is an almond based tart, similar in style to a bakewell tart. And I have included membrillo (or quince paste) in the base of the tart for a truly Spanish flavour!
