What's in our flour?

Our flour is a blend of whole flours – tapioca, rice, maize sorghum and potato flours. Milled, blended and packed here in the UK by specialist gluten free millers and packers. Tested and certified gluten free at nil parts per million (0 ppm) and a shelf life of one year.

The flour is very fine grained – no grittiness when you rub it between your fingers, and has a smooth silky feel. This translates into a mouth feel for your baking that has clean texture and structure, with none of the cloying aftertaste and bitter undertone usually associated with gluten free baking. Perfectly balanced to give incredible bakes.

Tapioca flour has wonderful binding qualities for gluten-free baking. Potato flour makes bakes light and moist, and is “sticky” like traditional wheat flour. No nasty additives, stabilisers, or GMOs – just the good stuff.

Whole maize flour is rich in vitamins and nutrients, including beta-carotene, vitamins A, E, B6, thiamine (B1), riboflavin (B2), niacin (B3), pantothenic acid (B5), folate (B9) and choline (B12).

Sorghum flour is nutrient rich, and contains more protein, fibre and minerals like phosphorus, potassium, calcium and iron and antioxidants than other gluten free flour substitutes.
