100g butter, softened
80g light soft brown sugar
80g Doves gluten-free self raising flour blend
40g ground almonds
1 apple, peeled, cored and finely chopped
30g mixed dried fruit
60g gluten-free muesli or granola
Preheat the oven to 180 degrees, gas mark 4
Grease and line a tin, approximately 15cm x 20cm
Cream the butter and sugar together. Beat in the eggs, one by one.
Sift in the flour and then add the ground almonds. Now add the mixed dried fruit and the chopped apple.
Sprinkle the muesli or granola over the top.
Bake in the oven for 30-35 minutes.
Allow to cool in the tin for 5 minutes, then cool on a wire rack. Cut into squares.
This is a moist and delicious cake for the Autumn.
